THIS IS HOW REAL SHINE TASTES– RIGHT OFF THE STILL. Instead of cutting it down to 100 proof, we just collect the hearts from our copper still at 140 proof and bottle it. We just mix it, let it ferment and distill it. It’s the same corn, sugar and water, and just like “All Purpose”, we don’t cook the mash. By morning, we had decided to create the premium version of our shine, and “All Mighty 140” was born. A sizable number of visitors also started requesting an even higher proof version of our Shine, and we pondered that request as we collected the hearts from the still one evening. At 100 proof, it was a pleasing nod to the traditions and heritage of Tennessee and the whole South.įolks appreciated the authenticity of the recipe, and seemed to enjoy being taken back in time to the simpler ways with each sip. Immediately popular, it showed how a high-proof spirit made from only Giles County white corn, sugar and pure water could reach the hearts of locals and visitors alike. All Mighty Moonshineīig Machine Distillery first offered their “All Purpose Shine” to the public in 2013. We invite you to taste our Southern heritage whiskey and to appreciate our quality and attention to detail. These selections or cuts are the reason we believe that the traditional small batch process is superior to the continuous distillation process often used these days. No “heads” or “tails” make it into our barrels. Our chief distiller, Clayton Cutler, makes judicious distiller’s cuts during each distillation and only the select “hearts” of the run are set aside for aging. Our mash bill is locally grown white corn, wheat and malted barley which is fermented and then copper pot distilled. This signature step serves to differentiate Clayton James Tennessee Whiskey from all other Tennessee Whiskies. Instead, we allow our spirits to acquire unique sweet maple smokiness from the charcoal. Since our new whiskey is only “hearts”, we don’t need to use charcoal filtering to remove impurities or take off a harsh edge. We use the Lincoln County Process quite a bit differently than others.
